Fruit Flavored Mousse

It's really not Mousse, but it's soooo goood!

Follow directions on sugar free Jello package (pick your favorite flavor, mine is black cherry) for quick set method and when the last of the ice cubes has been removed, add about 1 cup of cool whip or any whipped topping and use a hand mixer (it looks like it wont mix, but it does) until slightly thickened...chill for an hour.

Similar directions are right there on the box, but I like more of the whipped cream in mine ;)

Freeze for ice cream consistancy!

The "Mmmm" Burger




These are so good, you don't need a bun and you might agree...very easy.

I lb of beef, pork and veal
1/2 cup or more (I put more) grated Romano or Parmesan cheese
1 tbs of fresh minced parsley (flat leaf)
1 egg
onion powder, as much as you prefer
just a dash of half and half
salt and pepper to taste

Mix it all together in a bowl and form patties
I fried them in 2 tbs. of butter, yummm
Top with a slice of any cheese of your choice

Makes about 6 large patties...so freeze what you don't eat for future meals.

Rooster Omelet

This one is simple:

Ingredients:
3 0z Grilled Chicken Strips - broken into chunks
2 Slices Provolone Cheese
4 Eggs beaten
Seasoning you like best.

Spray the pan with oil then heat the chicken chunks
Beat the 4 eggs until mixed and pour over the chunks. Distribute chunks of chicken on one side of the omelet. When the eggs are almost cooked, lay-in 2 pieces of provolone cheese and fold omelet. Cook for an additional minute or so... slide into a plate and enjoy.

Cabbage Pepperoni Pizza

This recipe is a collaboration between Don and Ed:

Ingredients:
1 Large Head of cabbage
6 slices of Pepperoni
5 slices Mozzarella cheese
2 Tbs Butter
Salt, Pepper, Onion Salt, Garlic Salt (to taste)

Begin by slicing the cabbage head down the center. Slice 1/2 inch slices from the center of the head to result in 'thick cabbage rounds'. Do not core the cabbage stem, just cut it even with the bottom of the cabbage.

Heat an oven safe non-stick pan on high and melt the butter in the pan. Place 3 rounds of cabbage in the pan and fry on high for about a minute on each side. You don't want the cabbage to get soggy. Remove from the heat and season with salts and pepper to taste. Place 1 slice of mozzarella cheese on each round, then 2 slices of pepperoni on top of the cheese. Finally place a half slice of cheese on top the pepperoni. Place the pan in the oven under the broiler until the cheese is bubbly and brown and the pepperoni smell drives you crazy.

Remove the pan from the oven and allow the mozzarella cheese to firm up a bit. This helps to keep the cabbage rounds from falling apart. Serve using a spatula and enjoy.

Antipasto Salad

All the other carb laden foods were omitted, try this!

3/4 lb of proscutto or genoa salami (sliced deli style and rolled)
1/2 lb of provalone cheese (cubed) or any cheese of your choice
1 can of black pitted olives
4 hard boiled eggs (sliced)
2 cans of solid packed tuna in olive oil (drained)
1 can of anchovies (optional)
6 leaves of romaine lettuce
Extra virgin olive oil

Line a dish with romaine lettuce leaves and arrange with tuna in the center and all other ingredients in each leaf....serve the leaves filled with ingredients then top with tuna from the center and drizzle with extra virgin olive oil.
Serves 6

Perfect, even without the bread.

Simple Grilled Salmon

This is a tasty Italian inspired, salmon dish.

Filet of Salmon (about 2 1/2 to 3 lbs.)
juice of 1 Lg lemon
1/4 tsp of garlic powder
1/4 tsp of onion powder
1 tbsp dried parsley
1/4 cup olive oil
About a tbs of capers
salt and white pepper

Cut salmon into 3 inch steaks (makes 6 to 8 steaks).
Put all of the salmon into a zipper bag and add all remaining ingredients.

Marinate in fridge for 2 hrs or more.
add the salmon to hot grill
Cook for a few minutes on each side until done.
Add capers and a lemon wedge as garnish

Low in carbs, delicious too!

Portabello Pizza, Sunny Style

2 to 4 lg Portabello mushrooms (stems removed)
1/4 cup of light olive oil
6 grape or cherry tomatoes halved, for 2 shrooms
Mozzarella cheese
Dash of Oregano, garlic powder and onion powder
Grated Parmasian or Romano cheese

Brush both sides generously with olive oil and place in oven safe frying pan, coated with cooking spray and cook on cook top for 3 to 5 mins on each side, depending on how cooked you like them

Place frying pan in 350 degree pre-heated oven for about 10 minutes
Add tomatoes, mozzarella and spices

Broil until cheese is melted and golden in color, then sprinkle with grated cheese

(you can add pepperoni or any low carb topping of your choice, as you would with regular pizza)

Who said you can't eat low carb Italian!!

Italian Sloppy Joseppi's

2 lbs. of ground beef
1/2 bell pepper, minced
4 scallions, thinly chopped
2 cloves of sliced garlic
1 cup of canned tomato sauce
1 tsp. of dried oragano
salt and pepper to taste

Fry the ground beef in cooking spray, drain well and return to pan.
Add the bell pepper, scallions, garlic and oragano, salt and pepper and cook together for about 4 mins, stirring often.
Add tomato sauce and cook low and covered for another 20 mins.

Serve in a small bowl and instead of a fork or spoon, use some spicy pork skins, or not!

Sunny's Chicken Parmasian


4 Boneless chicken breasts
2 cups of shredded mozzarella cheese
2 cups of sugar free Pizza sauce
*Soy flour*
3 beaten eggs
4 tbs. of a olive or canola oil
1 green bell pepper (cut into 1/2 inch strips)
4 scallions (cut in 1/2 inch pieces)
2 cloves of sliced garlic
1 cup of sliced mushrooms
salt and pepper to taste

Cook green pepper, scallions, mushrooms and garlic in 1 tbs of oil and set aside.
Remove any fat from chicken and dip into beaten eggs
Lightly coat with soy flour and fry in 3 tbs of oil on med. heat until fully cooked.
Add the green pepper mixture over top in a baking dish and top with the sauce and mozzarella cheese.
Put into broiler just long enough to melt the cheese. Serve hot.

Peanut Butter Fudge

Don gave me this recipe about 5 years ago, and it is a great one!!

Ingredients:

1 Stick of butter
¾ cup of heavy cream
1 package of Jell-O instant sugar free vanilla pudding mix
1 package of jell-o instant sugar free chocolate pudding mix
3 tbs sugar free peanut-butter.

To prepare:

Melt the butter in a sauce pan (doesn’t need to get too hot.. just melted to liquid)
Mix in the heavy cream till blended and remove from heat
Mix in both packages of jell-o pudding mix and peanut-butter

Pour into a 8 inch square baking pan and refrigerate.

Cut into 25 squares.
Each square is 3 net carbs and YUMMY

Mom's No Crust Ham Pie


8 eggs
1 lb. diced ham
1 cup grated Romano cheese
1/2 lb. ricotta cheese

Mix ingredients with electric mixer and pour into a glass baking dish that has been lightly greased with cooking spray. Cook at 350 degrees for 1 hour and 15 mins. Serve once cooled. Keep refrigerated.

So simple and so good. But as you can imagine, you can add anything you like to this dish, I like to add scallions (green onions) but you can add sausage or anything you like to it!

Don & Ed's Shrimp and Tomato Slaw


Slice a pound of cabbage, very thin and then chop.
10 cherry or 15 grape tomatoes, diced
Thaw and chop a 1 pound bag of medium sized, cooked shrimp (in 3 or 4 pieces each)
Salt and pepper the tomatoes and shrimp to taste.

For the slaw sauce, mix 1/3 cup of mayonnaise with 1/4 cup of ranch dressing. Mix in 1 tsp of cider vinegar, a dash of onion and garlic power, a dash of paprika, 1/2 packet sweet-n-low, and mix it all together.

Mix all the ingredients in a bowl and mix with dressing.
Refrigerate until chilled and Enjoy!

Salmon a la GalPal

Lightly brush Salmon filets with olive oil and top with
Diced tomato, green bell pepper and red onion
Salt & pepper to taste

Bake @ 350* 'til done (several minutes depending on thickness of filet)

Grilled Tuna Steaks From Contessa GalPal ;)


Grill Tuna Steaks (1-2 min on each side)
Lightly brushed w/ olive oil little sea salt/pepper.

Set aside to cool and make dressing:
1/4 cup evoo
1/3 cup lime juice
2tsp soy sauce
4-5 dashes of Tobasko sauce
Mix together and add 1 cut up avacado to dressing

Cut tuna into bite size pieces and add 3 cut up scallions

Pour dressing mix w/ avacado over the tuna
Serve on top of 2-3 lettuce leaves.

Baby mixed greens
Baby spinach
Shredded red cabbage
Strawberries, sliced
Walnuts
A small amount of red onion
Dressing made w/ evoo (extra virgin olive oil) and red wine vinigar
Crumbled crisp bacon can also be added

Feau-Strawberry Shake


Well, this one is a stretch, and you have to use a little imagination but:

1/3 Cup heavy cream
5 medium strawberries with the tops cut off.
1/4 packet sweet-n-low
splash of vanilla

Freeze the strawberries. Put all ingredients in a bullet blender and blend until thickened. 

Sip and IMAGINE!

Sunny's Chicken and Spinach Cream Sauce



It only looks complicated, it's not...

4 boneless breast of chicken
2 bags of spinach
1/2 red bell pepper diced
1/2 lb of fresh, sliced mushrooms
4 cloves of garlic, halved.
1/4 cup of grated romano cheese
4 tbs. of butter
1/4 cup of light cream
1/4 cup of fresh bacon bits
salt and pepper to taste

Melt 2 Tbs. of Butter in a large skillet and 2 cloves of Garlic, add in the chicken breasts until done. Cut chicken into strips and set aside.

Melt remaining 2 Tbs. of butter in same skillet and add remaining 2 cloves of garlic, and mushrooms. Add in the diced red peppers and cook for about 3 to 5 mins.

Add cheese and light cream and then add the chicken pieces. Mix well.
Simmer for a few minutes
Add spinach at the end and stir a few times until slightly wilted
Sprinkle with bacon bits
Add salt and pepper to taste

Roast Beef with tomato and cheese


Tonight, for dinner i took a few slices of the roast beef, heated a fry pan and put in a little butter. I cooked the roast beef slices a bit, then sliced a few small cherry tomatoes, put them on top of the roast beef, then a little provolone on them, popped them under the broiler, took em out and put on some spicy mustard. YUMMY... something different to eat

Pepperoni Chips a-la-GalPal


GalPal.. your comment idea about pepperoni chips was DA-BOM. I made some this afternoon. I placed some paper towels on a plate, put slices of pepperoni down, then covered with another paper towel. Nuke them for 1 minute, flip them and remove the top paper towel and nuke for another 30 seconds, or until they are as crispy as  you want. DELICIOUS snack. 

I saw online several 'ways' to make them. One guy said they are they are excellent dipped in plain sour cream. I'll have to try that.

Shrimp and Tomato Slaw


All I have to say about this one is WOW. I had a brainstorm tonight. I wanted to have a shrimp salad for dinner. When I took the stuff out of the refrigerator I saw I had a head of cabbage. I decided to wing it and try to create a cold shrimp and tomato slaw. It turned out great. Here is what I did:

Slice up a pound of cabbage, very thin and then chop.
Dice 10 cherry tomatoes. Thaw and chop a 1 pound bag of medium sized shrimp (in 3 or 4 pieces each) then salt and pepper the tomatoes and shrimp to taste.

For the slaw sauce mix 1/3 cup of mayonnaise with 1/4 cup of ranch dressing. Mix in 1 tsp of cider vinegar, a dash of onion and garlic power, a dash of paprika, 1/2 packet sweet-n-low, and mix it all together.

Throw all the ingredients in a bowl and mix with dressing.

In a perfect world you would let it set for a few hours, but, we ate it right away, and it was most excellent. Best part is I have left-overs for lunch tomorrow. That was a small success for me in itself, in the past I would have just eaten all, after Ed got what he wanted. Woooo-hooo.. I feel great!
